The Day AFTER Thanksgiving

I haven’t lived at my parents’ house for a LONG time now, but it is the same routine every morning I wake up at their house.  Wander into the kitchen, pour a cup of coffee, and if Mom isn’t already preparing breakfast, ask, “What’s for breakfast?”  Even at the ripe ol’ age of 32, I still feel somewhat like a child when I’m back at my parents’ house.  Like, I make breakfast for myself every single day, so why can I not do it at their house?  The morning after a big holiday is no different – it just seems to be a little slower.  Maybe we stayed up too late the night before, maybe we ate WAY TOO MUCH turkey and all the fixin’s, or maybe a few empty bottles of wine are to blame (no judgement, please.)  Whether you are a guest or the host, I want you to be prepared to throw something easy together.  And, what’s easier than a casserole?  Especially a breakfast casserole 🙂 Nothing!  You can even incorporate some of your leftovers from the day before!  Dual purpose = breakfast + eating leftovers so they don’t go to waste.  The following are some super easy recipes to keep you prepared, and not scrambling last minute (unless it’s the eggs……) If you’re feelin’ it, serve with a bloody mary or mimosa.  This will either pump up your guests for all the football to watch, or put them back to sleep (peace and quiet.)
