Episode 1

Welcome to the First Edition of The Weekend Post. For those of you don’t know, my last name is Post, which is where Toast to Post comes from, and The Monday Post, and now The Weekend Post. In The Weekend Post, you’ll find everything from recipes I plan on baking, life updates, things I do (both with and without kids!) weekend deals, and of course, fashion.

Toasttopost.com began as a hobby, a creative outlet you could say. It has turned into a huge part of my life and now I don’t know if I could imagine life without it. I am working on growing it, and with that, comes change. Change in the form of increasing my self determined “work load,” changes to the physical appearance of the site, and changes to my (lack of ) organization around posting, or in some cases not posting.

Well, enough of that, time to get on with it! I’d love to hear your feedback in the comments below.

What I’m Baking

I plan on making this Coconut Pound Cake found at RealSimple.com. I love coconut and think this looks quite tasty. I am, however, curious to see how this recipe works without adding any baking soda or powder! It says to cream the butter and sugar for a full 8 minutes to whip air into the batter. Thank goodness I have a stand mixer!

Dining With Littles

When someone asks you, “Where do you want to go eat?” Nine times out of ten the answer is usually, “I don’t care,” unless you are just craving something very specific. Add in the element of having KIDS to that question, and the combination of options seeming to dwindle closer to zero plus the thought of trying to keep them entertained for a full meal might just be too much. I have three go-to’s when it comes to dining out with the twins, and they are the following:

Hat Creek Burger Company

There’s a giant fenced in playground, and the burgers are delicious. And they have beer and wine. There is also a very big covered outdoor seating area, picnic tables, lawn chairs, and string lights. As a parent of twin toddlers, this is what I call livin’ the dream 🙂

Lupe Tortilla

I used to frequent Lupe Tortilla a lot before the twins. The beans, margaritas, and fajitas are amazing. As an adult with no kids, we typically walked straight past the outdoor sandpit and went straight to the bar (no need to wait for a table,) and I never really experienced sitting outside by the sandpit, until last week. My mom and I wanted to get out of the house, so we decided to go to a late lunch with the twins at Lupe Tortilla. We grabbed a table right by the sand (first come, first serve!) and the twins played and played and played. And then needed a bath as soon as we got home! We skipped the margs that day, but I could imagine a Friday evening with chips, queso, a marg, and the sandpit being so much fun!

The Oaks Kitchen

The atmosphere at The Oaks is one of my favorites. It has that backyard patio feel that a lot of times is accompanied by live music. But here’s the cool part – there is a real tree house that you can go into. Not like climb up a ladder to get to it, but more like a second story deck overlooking the restaurant and the observatory. And they pull out lawn games for kids on the weekends! So much fun!

Since Covid, they’ve moved even more tables outside to accommodate more outside seating.

ShopBop Spring Dresses

Spring dresses should be easy and flowy. Perfect for warm happy hours with friends, a walk through the park, or dinner on the back porch. I’ve rounded up a few of the dresses I have my eye on at ShopBop.

Target Spring Finds

Some of my favorite Target finds for Spring! I still think about this little pig all the time and pretty sure I will end up ordering it for myself. And did you see the bunny waffle maker? Just adorable!

Well friends, that is all for now! I’m headed to a friends’ daughter’s birthday party in a little bit and then plan on spending the rest of the weekend playing with Fancy Sprinkles and folding clothes 🙂
