The twins and I had a great weekend filled with family and friends. We got to celebrate my brother’s birthday on Friday evening and then see family from out of town on Saturday, followed by a fun pool day with Lindly and her family on Sunday. Needless to say we were all pooped and went to sleep super early last night! This week, in TMP, I’m sharing the easiest and most delicious side dish I stumbled across this weekend, the book I am currently reading (and loving!), and a new collab and discount code for you! Easy Weeknight Side Dish

This is not my picture – the twins started eating mine as soon as they were done cooking and before I knew it, most of the pot was gone and I never got a pic πŸ™‚

Over the weekend I was flipping through a cook book just casually browsing the fall recipes – Creamy Autumn Pumpkin Soup, Stuffed Pork Roast with Spinach and Feta, and Chopped Harvest Salad with a Cherry Vinaigrette were a few that caught my eye. Then, I saw a side dish that made me stop turning because of how simple and delicious it looked – Butter Parsley Noodles. Y’all….the easiest recipe in the world and the twins LOVED them! They kept asking for more and more and I kept going back for more and more – I guess when you combine noodles, butter, garlic, and salt, you can’t go wrong. This was so easy to whip up and because I panic bought a BUNCH of different kinds of noodles at the beginning of quarantine, I’m good to go for a while.

  • 16 oz wide egg noddles (or noodle of choice – I actually used garden farfalle)
  • 2 chicken bouillon cubes
  • 1/2 cup (1 stick) butter, cut into 8 pieces
  • 2 cloves garlic, minced
  • 1/2 cup fresh parsley, chopped
  • Himalayan pink salt

Dissolve the bouillon cubes in a large saucepan of boiling water over medium high heat. Add the noodles and cook according to the package directions. Drain the noodles and return to the saucepan. Add the butter and garlic to the noodles and toss. Add parsley (or not for the toddlers….) and sprinkle with the pink salt. Your taste buds will thank you. The toddlers will thank you. Add in rotisserie chicken for protein if you are making this a main dish.

I had a facial on Friday and one of the things we talked about was maskne. Y’all, I know, it’s not glamorous, but it’s a real thing. I talked a lot with Ana from Radiant Skin Studio about ways to combat and prevent maskne – be on the look out for a full post about it later this week. Currently Reading

The City Baker’s Guide to Country Living by Louise Miller is the perfect book to read right now. Compared to all the darkness and negativity we are surrounded with day in and day out, it is light, easy to read, in a small town setting, and starts off in FALL in Vermont…..which can I just say I have got to travel there someday. The apple pie baking contest is the big to-do in town, the Harvest Festival is happening, and Olivia Rawlings is learning what it feels like to finally belong somewhere. I’ve also read The Late Bloomer’s Club by Louise Miller and think it is absolutely precious as well. I highly recommend both if you are looking for something light and easy and to take your mind off of current events.
