
The Weekend Post 6
We don’t have a whole lot going on this weekend! I’m hoping to get in some outside time and maybe a trip to the park! The weather has just been so nice lately and I know before we know it, it will be typical Texas hot and humid. I really need to get some sort of outside furniture so we can actually eat meals outside. We do a lot of snacks in the backyard, but there is not an actual table to eat off of.

From the Archives – Fully Loaded Pimento Cheese

I originally published this is May of 2020 and I’m not bragging or anything, but it is so good! With the Masters being this weekend and Instagram going crazy for it, I thought I would reshare my take on one of the Masters Classics – the Pimento Cheese Sandwich.
Disclaimer: I don’t know much about golf or the Masters and really the only thing I know about the Masters is that people rave about the Pimento Cheese Sandwich and the flowers, specifically the azaleas (which are a fave of mine.) Back when I used to work in an office (LOL) there was a 90″ tv screen right behind me and when the guys would gather to watch the Thursday and Friday showings of the Masters, I would turn around and admire the pretty flowers 🙂
Fully Loaded Pimento Cheese
Ingredients
- 1 (8 oz) package cream cheese, softened
- 4 cups sharp cheddar cheese, shredded
- 1/3 cup mayonnaise
- 1 tsp. garlic powder
- 1 (4 oz) jar diced pimentos, drained
- 4 tbsp pickled jalapenos, diced
- 1/2 medium onion, finely chopped (I use this chopper)
- 1/2 cup pecans, chopped
- 2 – 3 dashes hot sauce (I use Frank’s)
- Preheat oven to 375 degrees. Place pecans in a single layer on a baking sheet and roast for 8 – 10 minutes until golden brown. Watch them carefully because they will burn easily. Cool for 10 minutes.
- In a large mixing bowl, combine the cream cheese and cheddar cheese. I use a hand mixer for this.
- Then, add in all of the remaining ingredients and combine thoroughly. Cover and chill for at least 1 hour. It needs to be chilled because it helps all the ingredients stick together and harden up a little bit.
- Serve with crackers, on toast, or eat as is.

Janie and Jack 20% Off Sale
I didn’t know it was possible to have such cute items for Kids Clothing. If I could buy all of these items, I would. Janie and Jack is a little pricier for children’s clothing, so a 20% off sale is GREAT. I like to think of these outfits as “specialty” pieces…..for a birthday party, wedding, special family event, etc. These aren’t your average “wear every day to daycare” type of clothes, but they are so dang adorable!
To Do This Weekend – No Label Brewing
It looks like we are going to have a great day here in Katy! A cold front blew in but is now warming up, and Alexa just informed the high is 83 degrees! Head on over to No Label Brewing in Old Katy for a fun afternoon of crawfish and beer! The only times I’ve ever been to No Label were in the heat of the summer, and it was HOT! It’s essentially a big open outdoor space with food trucks and the taproom to get beer, so now is PRIME time to enjoy without it being too hot. Oh, and did I mention there will be crawfish 🙂
For the Twins


I feel like the theme of my life right now is “spend as much time outside as possible.” The twins got these balance bikes for Christmas and love them so I decided to order them true tricycles that they actually pedal. The red one has been delivered – it was my first time experiencing a SAME DAY delivery with Amazon, and the pink one won’t be delivered until Monday. Click here to shop!
