|The Monday Post| #65

****typed while trying to rid myself of the Sunday scaries. I’m not even kidding, last week felt like I was in some sort of weird alternative world and I am having to really focus on how to act “normal” again.

On the Menu This Week

I love cheeseburgers and so do the twins. Cheeseburgers can be served with all sorts of fruits and veggies and are a good source of protein. Here’s a weeknight meal hack I started using a few weeks ago for our weekly burger night: Buy precooked frozen hamburger patties. I know, I know, probably not what you were expecting to hear, but y’all, it’s WAAAAYYYYY better than fast food and junk food and like I said, serve it with an array of colorful fruits and veggies and call it an easy meal.

I buy these from HEB:

National Margarita Day

Today is National Margarita Day. Woo Hoo! I thought this picture was pretty fitting (especially for those of us still under a boil water notice!) Here is the recipe to my favorite at home margarita:

Jalapeno Margarita

Mix 2 oz (approx 3 tbsp) of tequila with 3 tbsp fresh lime juice (squeeze it yourself – this matters,) 1 tbsp freshly squeezed orange juice, 1.5 tsp light agave nectar, a few thinly sliced jalapeño rounds, and ice in a shaker. Shake for 30ish seconds, pour over ice. Garnish with lime wedge or more jalapeños depending on how much heat you can take. My recommendation would be to start small and add in more jalapeño later.

Non alcohol version – mix in sparkling water instead of tequila 🤩

Snowpacolypse

I kind of feel like this is a bad word at this point. And the next time a cold front with freezing temps is in the forecast, I think there will be a lot of people freaking out. I think the worst part about it is that we couldn’t really enjoy “snow in Texas” because there was no way to go inside and warm up after being outdoors in the frigid temps. That, and being completely disconnected from the outside world. We would go outside in 3 – 5 minute intervals and then run back inside trying to keep the cold air out and the warm(ish) air in. Finally, on Tuesday morning, I made the decision to go to the twins’ dad’s house. He had power the entire time which is AMAZING! We returned to the house Tuesday evening because the outage tracker showed the power was back on, but it was not. I said, “Let me run inside to go grab a few things,” and luckily I did because when I walked into my bedroom and bathroom, the floor was wet! A pipe had busted in my master bathroom but luckily was leaking out the back wall of my house. THEN, we opened the door to the garage and water was POURING through the ceiling and on top of my car and all over the place. We got the water completely shut off and it stayed off until they could come and fix it on Thursday afternoon. I have a temporary fix and have running water in all of my house except the master bathroom.

On a side note, the first time I drove my car after all this happened, I was pretty much dying laughing as I was driving down the road and sheet rock and pieces of my garage ceiling were flying off my car 🙂 Gotta find the humor in life!

Chinoiserie Pet Bowls

Okay, so Lola is already pretty bougie with her Kendra Scott dog bowls, but how AMAZING are these chinoiserie pet bowls???? Lindly sent these to me and I about fell out of my chair they were so beautiful. It might also have been because of the super cute fluffy puppy in the picture, but I think these are so beautiful and would be a great house warming gift for someone! Or dog birthday present 🙂 Lola Mae turns 8 in March! I can’t even believe it!

J. Crew New Arrivals

And they are everything my spring dreams could imagine 🙂
